About the Author

Aaron Owens Mayhew, MS, RD, CD has practiced as a registered dietitian for the last seventeen years. She earned a master's degree in nutrition from Tufts University in 2001 and has since launched her own business, Backcountry Foodie LLC, in January 2018. With her business, she combines her passion for food and outdoor adventure by writing cookbooks including personally trail tested recipes and ultralight meal planning consulting services. Aaron has developed a passion for long-distance backpacking and longs for the next time that she can put on her pack and spend the night in her tent gazing at the stars. She hiked over 1200 miles in 2017 and completed the Oregon Coast Trail in August 2018. Aaron's bucket list of adventures is endless as is her passion for educating outdoor explorers about eating healthy for peak performance. Aaron is currently writing her next book, "A Complete Guide to the Oregon Coast Trail," based on her own experience thru hiking the 382 mile coastline.

This is an amazing book chock full of not just food ideas, but carefully adjusted recipes tailored for the high calorie and nutritional needs of long distance hikers. This is completely unlike any "here's what I bring on the trail" YouTube videos which are usually well-intentioned but lacking in proper nutritional balance and convenience for the trail like put forth in this book. Important thing to note: The recipes in this book are really not for the casual hiker or camper... at least in the full portion sizes provided. Typical 'meals' run 700-1000 calories, and are heavily loaded with long-burning fats, as well as quality carbs and proteins. I purchased the eBook version on the author's site (not available on Amazon) and just spent close to 2 hours reading all the critical introductory information, then perusing the recipes, of which there are many covering all aspects of a typical long hike day. Great depth here.

I purchased the digital version of this book when it was first released, and I'm excited to see a paper edition available now. My husband and I recently hiked the 93-mile Wonderland Trail around Mt. Rainier and most of our meals were made from the recipes in this book. There was not a dud in the entire bunch, and with our hectic on-the-gonlives at home, we truly ate better on the trail than we do at home most days!While there is some initial upfront cost and work in procuring the dehydrated and/or freeze-dried ingredients from various sources (and you can certainly save some money and dehydrate some of the ingredients at home, which we did), the benefit of creating nutritionally sound and delicious meals for the trail far outweighed the effort. And we undoubtedly saved money per meal over purchasing commercially available dehydrated meals.We made the following recipes for our hike and were very pleased and satisfied with each and every one: Raisin Pecan Ramen, Fruity Breakfast Grits, Citrus Pecan Cream Cheese, Blueberry Almond Oatmeal, Strawberry Coconut Almond Oatmeal, Southwest Cheese Dip, Carrot Salad, Thai Peanut Ramen, Garlic Parmesan Ramen, Lemon Butter Ramen, Backcountry Spaghetti, Apricot Rosemary Couscous, Vegetarian Stroganoff, Double Chocolate Coconut Pudding, Peanut Butter Bananas Foster, Coconut Vanilla Pudding, and Chocolate Peanut Butter Milk.In my opinion, feeding your body is just as important as feeding your soul in the backcountry. This book makes it an easy and enjoyable task and I highly recommend it!

I have the electronic version of this book. I am a cook and love to cook at camp, but the story changes when you are backpacking. The recipes in this book are so good that I have stopped taking my heavy cooking equipment car camping. These meals are also great to have around in case of emergencies where you may lose electricity.
